Shiitake Stipe Chitosan Exhibits Broad-Spectrum Antibacterial Activity
Chitosan samples derived from shiitake stipes demonstrated an inhibitory effect on eight species of pathogenic bacteria, both Gram positive and Gram negative. The effect was found to be dose-dependent, with significant inhibition observed at concentrations as low as 0.5 mg/ml.
