Preparation of Pickering Emulsions and Oleogels Using ZTNCP

ZTNCP with varying concentrations (2.5, 5, 7.5 mM) were used to prepare Pickering emulsions. Dispersion of the ZTNCP solutions (9 mL) was mixed with sunflower oil (1 mL) in a glass vial and homogenized using an Ultra-Turrax T10 homogenizer (IKA-Works Inc., Germany) at 23000 rpm for 2 minutes at room temperature. The Pickering emulsions were then obtained. For the preparation of oleogels, an aliquot (10 mL) of the resultant emulsions was subjected to one-step freeze-drying over 24 hours on a DELTA1-24/LSC freeze-dryer (Martin Christ Gefriertrocknungsanlagen GmbH, Germany).
