The rheological properties of oleogels were analyzed using an Anton Paar MCR302 rheometer equipped with a 50 mm diameter parallel plate and programmed with a 1.0 mm gap. To investigate the shear thinning and thixotropic behavior, amplitude sweeps (0.1~1000%, 1 Hz) and 3 interval thixotropy tests (3-ITT) were performed. All rheological measurements were collected within the linear viscoelastic range.
