Zein-SDS Complex Formation and Polypeptide Unfolding: Effect of SDS Concentration
The zein structure can form 'zein-SDS' complexes when 8 mM SDS (close to its critical micelle concentration) is incorporated, and the zein polypeptides unfold completely once the SDS concentration reaches 200 mM.
